My Favorite Blueberry Protein Muffins
In my opinion, you can never have too many blueberries (or chocolate chips, but that’s another recipe). These are so naturally sweet that you won’t miss the added sugar, and as I always do (eye roll from the kids) I’ve added some protein for a truly guilt-free, energizing snack.
My favorite blueberry protein muffins! (Modified from iFOODreal)
Ingredients
2 eggs
1 cup unsweetened applesauce
2tbs maple syrup or honey
1/4 cup coconut oil (melted)
1 tsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
1 1/2 cups almond flour
1/2 cup vanilla protein powder
1 1/2 - 2 cups blueberries - I prefer fresh and use up my mushy ones in this recipe
Instructions
Preheat oven to 350 degrees. Line muffin tin with liners or baking spray (I have one by Pam)
Mix all ingredients except blueberries until smooth, then fold in blueberries
Makes 24 mini muffins - bake for 16 minutes or 12 muffins and bake for 22 minutes
Let muffins cool for 20 minutes
Store in an airtight container for up to 3-4 days, or in a fridge for up to a week, freezer for up to 3 months
