My favorite breakfast

According to my health guru, women over 35 need to make sure to eat not only to fuel their bodies, but to help manage their hormones. So, I don’t eat carbs in the morning, so that I can allow my body to stay in fat burning mode a little longer. My breakfast consists of protein + veggies (fiber) + a little bit of healthy fat. It’s hard to figure out how to eat so many vegetables for breakfast, but this recipe makes it easy.

EGG BAKE modified from Skinny Fitalicious

Ingredients:

6 whole eggs

1 carton of egg whites

bag of frozen spinach (can also use fresh vegetables. I aim for Easy.)

bag of frozen broccoli

bag of frozen peppers

bag of mixed mushrooms

5 chopped up Applegate turkey patties

Cook for 1 hour at 400 degrees in a glass pan.

And seriously. That’s it.

(I like to add feta cheese when I have it in the morning.)
